General Tso’s chicken

General Tso, associated with Chinese military strategist Zuo Zongtang and the alleged author of this dish, did not have an opportunity to create and try it. He did not know what he missed out on! This dish is very popular in Chinese restaurants in America. Chicken in sweet and sour sauce is a classic dish of international Chinese cuisine.

Ingredients:

  • 500 g chicken leg without skin or bone
  • 3 tablespoons of potato flour
  • frying oil
  • 1/4 teaspoon of chilli flakes or 2 dried chilli peppers
  • jasmine rice
  • chives

Sauce:

  • 1/2 tablespoon grated ginger
  • 2 cloves of garlic
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 2 tablespoons water
  • 1 tablespoon tomato paste

Preparation:

  1. Remove the skin from the chicken leg, cut the meat off the bones and dice it;
  2. Season the meat with salt, pepper and coat in potato starch;
  3. Mix the ingredients of the sauce in a separate dish and set aside;
  4. Heat up a deep frying pan, pour in oil to approx. 2 cm high;
  5. Put the chicken pieces on hot fat and fry them on high heat for about 8 minutes until the meat is well fried and slightly browned;
  6. Pour off the fat, leaving about 2 tablespoons, add the chilli peppers, pour in the sauce, stir and boil;
  7. Boil the jasmine rice keeping it loose;
  8. Place the chicken on the boiled jasmine rice and sprinkle with chives.
